Meet our chef!
Meet our new member, Chen Kho
First of all, you have to prepare some ingredients which you can simply find them at baking ingredients shop or supermarket's shelf.
Cake
- 500g cream cheese
- 100g castor sugar
- 200g thickened or whipping cream
- 5 egg yolks
- 100g superfine flour
- granted rind of 1 lemon
- 1 tsp vanilla essence
- 5 egg whites
- 65 castor sugar
- 1 tsp freshly squeezed lemon juice
- 100g blueberry
Base
- 200g digestive biscuit
- 100g butter
METHOD
1) Grease and line the base of a 22cm round cake pan with greased baking paper. After that, preheat your oven to 150 degree celcius |
2) Grate lemon rind and squeeze juice from one lemon.
3) Separate egg yolk from egg white.
4) Sift both flour together
5) Mash biscuits into crumbs.
6) Melt butter over slow fire and turn off once butter is melted. Pour melted butter onto biscuit crumbs and press firmly with masher. Leave biscuit base into freezer for an hr
7) Beat cream cheese and sugar until smooth. Blend in whipping cream and beat until combined.
8) Sift
in both flours and add the lemon rind and vanilla essence to mix
9) In a separate bowl, whisk the egg whites until foamy.
Gradually add sugar and lemon juice and whisk until soft peaks form
The meringue should be stiff enough to stay inverted.
*Tips: Remember to ensure egg yolk is not mixed into egg white or else the meringue will not be stiff
10) Gradually fold one-third of the egg white into the cheese mixture then fold in remaining egg white until just combined
11) Pour half of the mixture onto prepared cake tin. Spoon some blueberry onto cheese mixture and pour remaining cheese mixture over it
12) Place cake pan in water bath and bake for 1 hour and 40
minutes until golden. Leave the cake in the oven for half an hour after that.
Leave the cake to cool completely in the oven with the door ajar.
